Apple Pie

Yields1 Serving

Crust
 2 ½ cups flour
 1 tbsp sugar
 ¾ tsp salt
 10 tbsp 1 1/4 sticks - chilled unsalted butter cut into 1/2 inch cubes
  cup vegetable shortening - chilled cut into 1/2 cubes
 6 tbsp ice water
Pie Filling
 ½ cup sugar
 ¼ cup brown sugar
 2 tbsp flour
 1 tbsp lemon juice
  tsp cinnamon
 3 lbs apples
 milk
 additional sugar

Crust Directions

Blend flour, sugar and salt

Add butter and shortening - cutting them in until mixture resembles coarse meal

Add 6 tbsp. of water and mix until moist clumps form....adding 1 tsp of water if mixture is dry

Gather into a ball and divide into 2 pieces

Flatten each half and wrap with plastic wrap

Chill 2 hours - let dough soften slightly before rolling out

Filling Directions

Place oven rack in the lower 1/3 of oven and preheat to 400 degrees

Mix first 6 ingredients in large bowl

Add apples and toss to blend

Assembly Directions

Roll out 1 dough disk on floured surface until 12 inches around

Transfer to 9 inch pie dish - Fold edges under forming high standing sides and crimp

Add filing

Roll out 2nd dough disk as before

Cut into 12 1 inch wide strips

Arrange 6 strips across the pie - form a lattice by arranging remaining 6 strips diagonally across the pie

Gently press ends into crust edges

Brush lattice with milk and sprinkle lightly with sugar

Bake 10 minutes at 400 degrees - then reduce heat to 375 degrees and continue baking about 1 hour and 20 minutes - until juices bubble thickly and crust is deep golden - cover edges with foil if browning too quickly

Cool on wire rack for 1 hour
