Tzatziki Sauce

Yields1 Serving
 1 medium cucumber peeled, seeded and chopped into small chunks
 1 cup plain Fat Free Greek yogurt
 1 clove garlic finely minced
 1 tbsp fresh lemon juice
 1 tbsp extra virgin olive oil
 1 tsp red wine vinegar
 1 tbsp chopped fresh parsley or 1 tsp dried
 1 tsp dried dill
 Freshly ground black pepper
 salt to taste

Add all ingredients to a medium size bowl and mix together.

Cover and refrigerate

 

NOTE:  This Tzatziki Sauce can be stored in an airtight container in the refrigerator for up to 4 days.
